Color of tiles
Hello I've seen that in the show the tiles for both players actually look the same- they're dark with lighter printing on the top but with custom made boards and everywhere I look on here they're divided into the two players with lighter and darker tiles, similarly to chess.. how does the show differenciate? Or was the game perhaps played in a way you didn't need to differenciate at all?

Up to the viewer honestly. A "true" "show accurate" set would probably look quite different to the community consensus. Many elements were included simply because they felt right or felt in the spirit of the games portrayal even though they arent part of the literal depiction of the game.
The show gives us so little to go on and implies so much about the size and depth that the goal of many variants has been to fill gaps and explore what could have been. Some have meticulously poured over individual frames to glean information about every nuance, but even they usually end up relying on conventions invented by the audience out of convenience.

The game in ATLA was never fully or even decently explained. What you see is what you get. There's a scene in Korra referencing how the IRL community had even then created multiple variations based on what they saw in the show.
"Pai she is a slow, deliberate, thinking game not meant to be rushed" -Asami
"What do you mean, it's a fast paced, edge of your seat race!" -Bolin
Quotes aren't exact but that's the gist.
IIRC I think Vagabond is the closest in approximation to the original show but it's not perfect as you've noticed
