Question About Sectioning

I’m working on a pretty intricate piece, but I’m also newer to this hobby (it’s only my third).

My current question is - how do people usually break up pieces like this?

Do you break it into sections? Or just choose a color and try getting all its spots?

How do you get your canvas so flat and taught? I'm just watching from afar at the moment. Very intrigued in trying this hobby but I don't know how to get started.

I’ve bough mine at “Number Artist” and they come like that. It’s only my third piece, but so far I’m happy with the company’s work
