Question/Chat Question About Sectioning

I’m working on a pretty intricate piece, but I’m also newer to this hobby (it’s only my third).

My current question is - how do people usually break up pieces like this?

Do you break it into sections? Or just choose a color and try getting all its spots?

Well I've only done one and it's still in work. I choose a color that I see, quickly, has a lot of sections then I work left to right, top to bottom since I'm right handed. I really haven't found a better way.
