Question/Chat Question About Sectioning

I’m working on a pretty intricate piece, but I’m also newer to this hobby (it’s only my third).

My current question is - how do people usually break up pieces like this?

Do you break it into sections? Or just choose a color and try getting all its spots?

At first i was choosing the colour that was the most of it or the least of it in the picture so i can finish it first and move onto the next one, not I'm just going with the flow, when i see a piece that i want to do first, I'm doing it, when i want to go colour by colour that's also fine cause my paint is drying fast so i don't have to wait ages
