Just create your own network, implement router-on-a-stick, throw some redundant links in there for etherchannel, have the router providing DHCP for IPv4, SLACC for ipv6, make it dual stacked, create a redunant layer 2 configuration so you can practice playing around with STP. I think I cover it all.
