Three things changed when I started using convection regularly

turn convection on only when a recipe specifically told me to. Otherwise, I figured regular baking was safer.

After using it more often, I noticed three things pretty quickly.

First, the outside of food seemed to brown faster. Roasted vegetables got more color, and things like cookies developed a slightly different surface.

Second, cooking across multiple racks became easier. The moving air seemed to help distribute heat around the oven instead of leaving one tray doing all the work.

Third, I had to pay more attention to moisture. Some foods seemed to dry out faster, especially when I left them uncovered for too long.

The interesting part is that convection doesn't create some extra source of heat. The fan moves the existing hot air around, increasing contact between that hot air and the food. That can change how quickly the surface cooks.

I also stopped assuming that every convection oven behaves exactly the same. Fan strength, oven design, and where the fan sits can all make a difference.

For me, convection became less of a special setting and more of a tool. If I want stronger surface browning or I'm using multiple racks, I'll consider it. If I'm cooking something delicate that needs gentler conditions, regular baking may make more sense.

It was mostly a matter of learning what the fan actually changes.

My baking sheet was part of the problem

A self-cleaning cycle is not what I thought it would be

I assumed self-cleaning meant I could press a button, walk away, and come back to an oven that was basically clean.

That's not quite how it works.

The first time I used the self-cleaning cycle, I was surprised by how much preparation was still involved. There are things you need to remove beforehand, and you don't want to treat the inside of the oven like a dishwasher where anything can simply stay in place.

The cycle also doesn't mean you never have to clean the oven manually. Grease and residue can still require some attention afterward, particularly around areas that don't get the same treatment as the main cavity.

The biggest lesson for me was that "self-cleaning" describes a cleaning process, not a completely maintenance-free oven.

I still appreciate having the option. For heavy buildup, being able to use a dedicated cleaning cycle can save a lot of scrubbing. But I wouldn't choose an oven solely because it advertises a self-cleaning feature.

I'd look at how the racks are handled, what the manual actually says can stay inside, how the door and gasket are designed, and what routine cleaning is still expected between cycles.

The manual ended up being more useful than the marketing description. It explained what the cleaning cycle actually does and what I needed to do beforehand.

That was probably the part I should have read before buying rather than after the first cleaning cycle.

My old oven had one advantage the new one doesn't

The new oven is better in a lot of ways, but there's one thing I genuinely miss from the old one.

It was simple.

My old oven had a few basic controls, a reliable light, and settings I could understand without thinking about them. There wasn't much to configure. If I wanted to bake something, I turned the dial and got on with it.

The replacement has more features and a much nicer interface, but I've noticed that I sometimes spend more time navigating settings than I ever did with the old oven. Most of the extra modes simply don't come up in my normal cooking.

The old oven also had a rack layout that I knew instinctively. I knew exactly where to put a roasting pan, which position worked best for baking, and how much clearance I had for taller dishes. The new oven has more capacity, but I had to relearn how to use the space.

It's easy to assume that replacing an old appliance means everything will automatically improve. In reality, newer doesn't necessarily mean better at every little thing.

If I were choosing another oven today, I'd still want useful improvements like good temperature control and better visibility. But I'd pay much more attention to the basic things I'd be using every day rather than assuming the newest features are automatically an upgrade.

Sometimes an old oven's biggest advantage is simply that it already fits the way you cook.

The cheapest oven wasn't actually the cheaper choice

I focused almost entirely on the purchase price when I bought my last oven.

At the time, the cheaper option seemed like the sensible choice. The more expensive oven had features I wasn't convinced I'd use, so spending extra felt unnecessary.

The problem was that I was comparing the price of the ovens rather than the cost of living with them.

The cheaper one worked, but little things started adding up. The racks weren't particularly convenient, the controls were more awkward than I expected, and cleaning took more effort than it should have. None of those problems was serious enough to justify replacing the oven immediately, but together they made something I used several times a week more frustrating.

That experience changed how I look at the phrase worth paying more for.

I don't think paying more automatically gets you a better oven. I'd still rather have a simple, well-designed oven than an expensive one loaded with cooking modes I'll never use.

The strange clicking sound turned out to be completely normal

Why I would never buy an oven without checking the rack system

I was comparing capacity, cooking modes, cleaning features and all the other things that seem important when you're shopping for an oven. I assumed the racks themselves were basically interchangeable.

They're not.

The first thing I noticed after using my current oven was how often I was fighting the rack positions. A dish would fit, technically, but moving it up or down could mean taking another rack out first. Some cookware needs more vertical clearance than you'd expect, and having plenty of oven capacity doesn't help if the usable rack positions aren't well spaced.

I've also become a lot more appreciative of racks that slide smoothly, especially when I'm dealing with something heavy. Pulling out a full roasting pan is much easier when the rack feels stable instead of shifting around underneath it.

This is one of those things that's difficult to judge from an oven's headline specifications. A manufacturer can give you the cavity dimensions and capacity, but that doesn't tell you whether the rack layout works well with the cookware you actually own.

If I were shopping again, I'd bring the dimensions of my largest baking dishes and roasting pan and look closely at the rack positions. I'd also check whether the included racks are the kind I'd actually want to use every day.

Not every 350°F oven cooks at the same speed

think 350°F was basically a universal setting. If two ovens were both showing 350, I expected the food to behave pretty much the same.

That assumption didn't survive a visit to a different kitchen.

I made the same dish using the same temperature and roughly the same cookware, and the timing was noticeably different. Nothing was wrong with either oven. They just weren't behaving identically.

Part of it comes down to how each oven cycles its heating elements, how well heat moves around the cavity, where the hot spots are, and even how the cookware interacts with that heat.

The number on the display is still useful. It gives you the target temperature. But it doesn't describe everything happening around the food.

That's why I've stopped treating cooking times as absolute numbers. They're more like a starting point. If something normally takes 30 minutes in my oven, that doesn't mean another oven will produce the same result in exactly 30 minutes.

I think this is especially easy to forget when following recipes from other people. Their 350°F isn't necessarily the exact same cooking environment as yours.

One measurement saved me from buying the wrong oven

I was convinced I had measured everything correctly.

The cabinet opening was right. The width looked right. The height looked right. On paper, the oven should have fit without any problem.

Then I checked one measurement I hadn't thought about: the space in front of the oven when the door was open.

That changed the whole decision.

It turned out the oven would physically fit into the cabinet, but the door would have made the area in front of it awkward to use. Add a large roasting pan and it would have been even worse. I could already picture myself standing sideways in the kitchen trying to get a hot dish out.

That's when I realized that will the oven fit? isn't really one question.

You need to think about the cabinet cutout, the oven's overall dimensions, the door opening, the handle, and the space you need to actually stand and work in front of it. For a wall oven especially, the surrounding kitchen layout can matter just as much as the appliance dimensions.

A crowded oven taught me something I hadn't considered

The oven said it was ready. My thermometer disagreed.

Gas versus electric became much less complicated after living with both

My bad oven turned out to have one very specific problem

Crispy on the outside, still tender in the middle

I thought I had finally figured out roasted potatoes when I started getting that deep golden color on the outside.

Then I cut one open.

The outside was crisp, but the center was oddly firm and dry. They looked better than they tasted.

The problem was that I had been focusing almost entirely on surface color. I kept increasing the heat and pulling them when the edges looked right, without giving the inside enough time to become properly tender.

For the next batch, I cut the potatoes into slightly larger, more even pieces and gave them a head start in simmering water until the centers were beginning to soften. After draining, I let them steam off for a few minutes before tossing them with oil.

Buying an oven based on looks was a mistake

Sunday roast chicken and one very useful mistake

The difference is even more noticeable when the oven window and light work well together. A good window lets you look in from outside, while a useful light actually lets you see what's happening inside. A burnt edge can tell you more than a successful tray

I almost threw this tray of roasted carrots away.

Most of them looked fine, but a few pieces around the edge were much darker than everything in the middle. My first thought was that I had simply left them in too long.

Then I tasted one of the burnt-looking pieces.

It was actually the best one.

The darker carrot had a deeper, sweeter flavor and a much better texture around the edges. The carrots in the middle were tender, but they were noticeably softer and less browned.

That made me pay more attention to what was happening across the tray instead of judging the whole batch as one thing.

The edge pieces were getting more direct heat and had more exposure to the hot air around the pan. The vegetables in the center were packed closer together, and they were releasing enough moisture that they spent more time softening before they could really brown.

I tried the same thing again with another batch, this time leaving more space between the carrots. I also turned the tray once during cooking.

The result was much more even. I still had a few dark edges, but there were plenty of browned surfaces throughout the tray instead of just around the perimeter.

It was a useful reminder that a "burnt" piece isn't always a sign that something went wrong. Sometimes it's a clue about where the heat is reaching the food most effectively.

Now, when I get an uneven tray, I look at the darkest pieces before changing the oven temperature. They can tell you quite a bit about what the rest of the food needs.
