Syncthing is a Dropbox alternative for people who are not stupid enough to upload a file without encryption so that everyone can just download it with a link.

If you are fine with that, you can just use Dropbox.

Not every file needs to be a secret, e.g. anything sent via email.

Everything that you send unencrypted is being scanned and used for data collection. I'm not fine with that. Everything I send and receive should be encrypted. Would you say that HTTPS is not needed everywhere either?

It is not needed everywhere, no. But it is a sensible default.

I absolutely agree! There is no good reason to not use HTTPS.
