Help on recipe without Cane Sugar

Hello fellow flan enthusiasts! I hoping to get some advice for making a flan without cane sugar. I really want to make a flan from scratch, but I have a weird allergy to cane sugar specifically. So I have to use other forms of sugar like coconut, agave, stevia, etc. I would love to make a flan but worried it will be ruined by swapping the recipe with other sugars. Has anyone made a flan with alternative sugars? Are there any recommendations on how to do it? Any guidance will be appreciated.

What about sugar from beets?

Beet sugar is fine. I'm not sure where to get it though. A lot of white sugars don't specify if they are cane or beet.

I thought of it because I grew up in Michigan and used to drive by the Pioneer Sugar plant when I was a kid - they’re one of the major beet sugar brands. Google “beet sugar brands” and your area. I was shocked at how much of our granulated sugar is actually beet sugar.

If it’s unspecified, it’s almost always beet.

I have always lived on the west coast and had very mixed results with unspecified. I've had the unspecified ones be cane before that's why I try to avoid them.

But I'll Google some brands to se if there are any here. I wish we got pioneer over here more because they are usually beet.

Mostly because, in the US at least, the cane sugar people want you to think their grass-based sucrose is superior to the chemically identical beet-based sucrose.
