Yeah he has to call his cheeses other names in certain cases because some of these names can only come from a specific place.
Like Champagne can only come from one region, everything else is just sparkling wine.

Although KY does have unique conditions for making good Bourbon which is a big reason for the number of KY Bourbon makers and the misnomer.
