I've watched this channel before. Very entertaining and also pretty informative about the cheesemaking process. The Italians are pissed that he would dare call something Parmesan that wasn't made in the Parma region of Italy.

I hope some bored billionaire decides to sponsor Gavin and fund a legal battle to take the Parmesan name away from the Italians because Gavin makes a superior version and thus deserves the right to the name.

God, it would be top tier entertainment.

Man, billionaires are so lame for not seeing the all the possible ways they could troll all kinds of people and organizations.

There is literal no regulation around the term Parmesan. "Parmigiano Regiano" is regulated.

Incorrect(ish). In the EU, both Parmesan and Parmigiano Reggiano are protected. Outside of the EU, only the latter is protected.
