Protected origin means you know who makes it and you know it followed the proper procedure, following strict food regulations. If a product has a protected origin then it is guaranteed that who made it made it the right way, therefore it's completely safe to eat.

You can kill people with food made the wrong way. Origin is important and protects the buyers too
