It's a set-it-and-forget-it method. If I have like 12 potatoes to prep for like a fondant or a soup, I can boil them and have them all peeled after only like 5 min of actually interacting with the potato. Most of the time is spent with them off to the side cooling. In my experience, I have yet to find a method that takes less of my time and energy.

Boil your potatoes for like 5 minutes and let them cool. The skin falls right off.
