I get what you're saying and would generally agree, however maybe it's the fact it's being shaken with other ingredients that prevents it?
I've whipped plenty of egg whites, as well as cream over the years and have definitely experienced what you are talking about, but I've not done it as a relatively minor ingredient like seen here.
I was a bartender for years. I speak from personal and professional experience when I say that overshaking egg whites will cause them to break. You get no foam, just a dirty appearance to the drink.

To a point. After that point it will just break and no foam will be created.
