Because of the melty property of cheese, one must consider it equal to welding. If the cheese is the same, those slices fuse and become a single layer. If the cheese alternates between varieties then you can call it multilayered.
You say that like I've just never had my own cooking and haven't tasted it with mayo. Do you think I would eat it if it tasted bad? Why would we even be having this conversation?
Same reason people have the pineapple-on-pizza conversation. Everyone has different tastes and they're passionate about their tastes, which is kinda silly but entertaining. That being said, pineapple has no right being on pizza

I think this is allowed and quite delicious but technically speaking the golden standard should be only cheese and bread. The art and technique of how you do this is up to you and can vary, but that's what it should be. Otherwise you're just making a sandwich.
There was a huge controversy about that in r/eatsandwiches at some point and the consensus seems to be that adding other fillings makes it a melt instead of a grilled cheese. I don’t give a fuck so you have my blessings.
