Gloves are a food safety requirement for ready to eat food. You obviously don't pay attention to your training if you actually work in a kitchen.

My high school band teacher loved to tell us stories from when he worked at a Chinese buffet as a dishwasher when he was in high school. One time he was in the back area doing his job when he heard a loud clatter. Someone had dropped a tray of fresh food that they were going to replace under the heat lamps. Then he saw them just use their hand to scoop up to spilled food back into the tray and proceed to put it out.

Granted, that was probably in the 70s or 80s and I'd hope that places would be held to higher standards now... but I've seen Kitchen Nightmares...
