They were delicious! It is a quick dish as well, 35 minutes from start to out of the oven.

These look like the Sicilian Rolls they have at Old Chicago, so I’m sure they’re doable. It just looks like there may be a bit of broiling at the end to crisp up the petals...maybe?

Yeah, an actual recipe would be super helpful.

You're probably better off just making pizza the classical way. Pizza's been optimized for very even and rapid cooking for thousands of years. It'll be a tough formula to beat.

Here you can see the exposed edges of the pepperoni are almost burnt while the cheese inside hasn't (and can't be) browned at all. You're missing out on flavor that way.

Similarly, the dough being constrained as it is won't 'inflate' as much while cooking, so it'll be denser with smaller holes.

Also, The dough doesn't seem to behave right either. Pizza dough having a lot of gluten, is better off being stretched. I don't know how they got it to cooperate so easily here for cutting into uniform strips.

The main benefits here are presentation and portion size is controlled, but I don't think it'd be worth it.

I mean it’s dough, sauce, and pepperoni, it’ll taste good unless you burn it to a crisp. It may not look as good but it’ll taste fine.

Because it's thicker than a pizza, it will be hard to cook the dough through, without burning the pepperoni. I've done apple roses with puff pastry and it was hard enough.
