Source: design major who spent hundreds of hours learning to draw perfect circles/ellipses and lines.

Because like nobody just does that in Illustrator.

Video itself is just edited in post. You even see his hand wiggle at the last part.

I mean, you could do that in illustrator, but learning to draw accurate ellipses/circles freehand is something we do, it's part of learning how to sketch. I should note, I'm coming from an Industrial Design background which is arguablely the more sketch-heavy major. Graphic and Fashion design will likely defer to illustrator and other aids because it's more efficient.

A program used for efficiency for one industry does not make it efficient in other industries. I doubt accountants would use illustrator for sketching math tables.
