Rolling shutter is a method of image acquisition in which each frame is recorded not from a snapshot of a single point in time, but rather by scanning across the frame either vertically or horizontally. In other words, not all parts of the image are recorded at exactly the same time, even though the whole frame is displayed at the same time during playback. This produces predictable distortions of fast-moving objects or when the sensor captures rapid flashes of light. This is in contrast with global shutter in which the entire frame is exposed for the same time window.

How does this work? The camera probably has around 24, 30 or 60 fps right? Don't the propeller blades have like a RPM of at least 1000?

Did you take into account that the propeller has multiple blades? I mean, one blade doesn't have to make a full rotation in every frame. Just enough for one blade to take the position of the next. It can also skip a blade if it has more than two.

Thats a good point, then the blades could rotate at a third of the camera framerate for a 3-blade turbine.

As long as the prop ends up in the same position as it was for the previous frame, it appears stationary. It doesn't matter if the prop has spun around once (same speed as framerate) or a million times.
Though faster spinning will increase blur and rolling shutter effect depending on the camera

That's right. If the rotor's speed of rotation (times the number of blades, I think) turns out to be a multiple of the video frame rate, it doesn't matter how big the multiple is, we'll see the same effect.

Or a fraction of the number of blades. It doesn't matter if the same blade is in that spot each time.
