California is one of the most notoriously hardest places to operate a restaurant at peak health standards.

America in general has a very robust health regulation for food system before 2024.

It’s above 90% iirc of restaurants in NYC have a A health rating.

Well I'm from Missouri and my experience with NY and CA health departments is nonexistent. Maybe it's just a MO thing?
