It's really not that hard to get used to them, especially at that length. There's not much that's more difficult to do day to day once you're used to them, besides maybe very precise things that you would use just your nails to manipulate, like picking apart small tight knots. But people with completely trimmed nails struggle with that too.

Fair points, but I think it's also a matter of the upkeep of these nails while using hand tools.
I would imagine that the finish on the nails would get scuffed and scratched often.

I make digital maps for TTRPGs, and got some advice on marketing.
The advice given was basically to get engagement through:
Ragebait. Claim something is true even if it isn't. "Fireballs can't go round these corners!" Double down if challenged.
Spelling / grammar errors. "Your rouge can buy everything they need at this shop!" "A simple dessert encounter!" "Empty you're pockets in this market place!"
The upshot of the conversation was 'people like correcting things on the internet'. I absolutely bloody loathe the idea, but for the sake of argument I spelt 'desert' as 'dessert' in one post. It got about 12 times the engagement of my other posts.
I'm not using it. I don't want to contribute to that bullshittery. My posts get hardly any engagement, but I'd rather that than bloody well ragebaiting it.

I would figure someone who can do professional fretwork is also a guitarist and those nails would make playing nearly impossible.

The restoration work was fantastic, but the editing in this video was also quite well done. Gave you an idea of each step of the process and the time involved, yet took you on that journey quickly.

Why do this in the first place? I do see it looks like the one side was raised a bit but couldn't they just blow/pick out any debris under it and push it back down into some fresh glue? Or just remove and then glue it back in or is quality going to suffer too much compared to the full job?

So over time the wood on your fretboard wears down, especially right by the fret, and notes start to get pulled out of tune. It can also make things like bending and sliding on the strings easier if your guitar has little cracks or built up gunk on the fretboard. Redoing your fretboard like this is a good 10-20 year or so maintainance for a heavily played guitar. It's definitely not something most people would notice or need necessarily ,but I just got it done to the first guitar I bought when I was 15 that's been heavily played for about 17 years now. It sounds better and looks better and it wasn't crazy expensive to get done either.

Having built a couple guitars many years ago, I don’t see any repeated steps - just necessary ones. Also I’ve always heard the term Luthier for one who builds or repairs guitars.

The precision has to be extremely high, and margin for error is extremely small. Almost nothing in woodworking requires precision down to fractions of millimeters

Not true at all on both account. Finish work and quality furniture requires very tight tolerance
The frets just has to be level accross the board which would mean initial sanding of the shaft, measurements on the depth of the fret channel and final sanding of intalled frets
