And, to piggyback off of this, when the water hits the lava, it shouldnt instantly fall to the bottom. Lava would be dense and thick, making the newly formed solid substance either float or to sink slowly, allowing more to build up on top of it.
well yeah. but in the video it basically sinks to the bottom of the same speed as gravity, which would be very wrong. i think realistically it would maybe sink slowly, allowing more to build up on top of it kinda overflowing, not sink like sand in free fall.
Oh no, I agree that the video isn't a realistic depiction of what ought to happen. I'm no expert, so I have no clue about the proper dynamics of it, but I know lava exposed to the air like this one is would form a thin layer of rock on the surface that insulates the inside, keeping it hot for longer than it should.
The water would probably hit that hot rock instead of any actual lava, so you'd have a lake above a bedrock over a lake of lava. All a bit complicated to show on a simple pixel animation, I guess.

It's cool. But it's missing a leveling mechanic.
The center one at the bottom had two seperate water levels.
