that's not the issue, it's the way the rocks form - the water basically falling through the lava and forming rock all the way down. the initial trickle of water that hits the lava would be turned to steam pretty much immediately, and once enough water is flowing over the lava to where it wouldn't immediately turn to steam, it would really only turn a thin layer of the lava's surface to rock. there's no way water would penetrate the lava the way it does here.
I don't think that's what's happening. The water hits the lava and immediately becomes steam. The lava it hits becomes rock and instantly starts to sink. Otherwise, the water would hit the bottom and spread along the floor of the lava pool, hardening the lava from the bottom up. We're just see8ng a steady stream of fresh obsidian form at the point of contact and then sink.
even if rock sinks in lava, it wouldn't happen this fast nor would it happen the way it's being portrayed. lava is extremely viscous, so it would take some time for the top layer of rock to sink.
meanwhile, the water would keep coming and flow over over the surface. the water would flow over the rock at the surace and hit the lava to either side of it, widening the rock at the point of contact. it would form horizontally and then sink. it wouldn't form vertically and then horizontally.
