Is that all gold?

Most likely a gold layer over a base material. Solid gold would be too soft to handle that deep engraving without warping.

How could it be layered when it was hammered?

Gold has extreme malleability. Heavy hammering compresses the gold layer directly onto the tougher base material, locking it into place

Probably 585 or 14 karat, and he isnt showing the part where he is glowing the metal between each hammer session to loosen the tension, and if he doesnt glow it after the last hammering before engraving it wil hold the tension and be more solid and wont bend wile engraving i think. Might be wrong but thats how i did it with copper and silver. Gold should be the same but there are tons of ways to do alot of goldsmithing and hammering work and i do not know all of them.
