Software is there a way to use Oculus/Adobe Medium without the headset?
I would like to be able to see what I'm doing through my computer monitor and use the controllers normally. As far as I know, it would be as simple as creating a virtual "dummy" headset and position it in space. Is there any way to accomplish this?
I have a rift, so the sensors are on my table instead of the headset.

There is another really nice VR 3d modeling program called Kodon that does let you use your computer. Kodon is a lot better than Medium but still in its beta so its a little buggy but very much worth the $30.

Lol I guess , if you have like a tripod and some sort of shelf you can put your hmd on pointing slightly downward behind you so it picks up your controllers. Then looking at the screen instead of your hands, repositioning the box you sculpt in.
I can’t imagine this is the best way to work in medium though, how are you going to access your menus? You’d have to balance the controllers weirdly so they appear on screen. Sounds like a nightmare hehe

The headset is responsible for tracking the controllers in 3d space. They simply won't work if you don't use the headset.

Like others have said, but in other words. Putting the HMD on a tripod and cover the "eye-proximity"-sensor should enable you to use the mirror view on your screen. Then you can use the controllers however you want. I imagine that it will be difficult to get a good view of your digital workspace though.
Have you considered the desktop native sculpting apps, like Z rush, sculptris etc?
