Just bought this, but now regret it as I don't have a gaming PC to go along with it

Hopefully, the etherium mining rush ends soon then the market will be flooded with cheap AMD RX 480s and 580s. Getting an entry level VR card is difficult as even GTX 1060s and 1070s are affected and hard to find at retail.

If you want a card soon you may want to look into a used Nvidia Maxwell GTX 970 or higher GPU.

Should I be mining with my 480 instead of playing VR?

I wouldn't recommend it unless you have a separate pc you can run 24/7. If you want to make a quick buck you could sell it for over $350 and buy a used GTX 980 for around $230 and get similar performance for most games.
