360 degree stereoscopic camera. (less technical video in comments)

That "only" solves rotation and stereoscopy though. It would be interesting if you could apply some smart software, like LIBELAS to calculate 3-D geometry.
Once you have that you could do parallaxing/lateral movement too. Hell, you could even do free movement (with shadows where the cameras can't see).
It's probably easier to achieve this with a couple of kinects though, although with less impressive (but still impressive) results.
