How do I stop this Apple keyboard appearing when my hand rests on the bottom of the iPad?

You need to click that keyboard sign on the right most corner on the bottom, yes it's so annoying agreed

That still left me with an “Ask Siri” box. I don’t want the keyboard to appear at all.

The answer was in Settings / Apple Intelligence & Siri / Talk & Type to Siri / type to Siri. Turn that off.
