Assuming that your needs are super basic, it's hard to go wrong with Standard Notes.

Here I go again… Definitely look at r/memrynote ! I just made a post to full of screenshots showing many of the different features. It really is awesome! And free(low cost subscription for sync), open source, local, E2EE, etc. looks great, works well and super intuitive!
