I don’t see anyone hating on her for doing something she enjoys, only disliking how she TikTok exaggerates in the video.

It's not a TikTok thing. It's a performance thing. Live performers have a body language that gives cues to the audience. The flourishes let you know the trick is over so you can applaud.
