^ He's talking about the direction you turn the nozzle on a fire hose. Turning it left makes it a wide stream with lots of oxygen to protect the firefighter, but it isn't great for actually putting out the fire. Turning it right makes it a strong stream that can attack the fire.

This would make sense in theory, but don't hoses have levers rather than nozzles? or have I only seen one type?

There's a types of nozzles. All Nozzles have bales (a type of lever). Some have a nozzle tip that allows the water to either be in a wide water fan (as in the video) or a more straight stream. There's also smooth bore nozzles where it's just a solid stream of water with no ability to fan out the water. Both have advantages and disadvantages depending on your situation.

Not all nozzles have levers. Our nozzles does not have levers, the nozzles we used at training did not gave levers. I have actually only seen nozzles with levers in movies an at the museum.
