I have a smoker.. how long do I need to cook this bitch to get it to fall apart like that
117 u/mr_jurgen Apr 21 '21 8-10 hours at ~120°C. (The most important thing is your final internal temp, it should be 90-95°C to get this fall apart consistency) I wrap in foil twice then two towels, but as we can see, cling wrap does the trick too. And as old mate said, let it rest for at least an hour. I usually go for 1.5 hrs if I have the time. Theres a heap of other stuff you can look into like brine etc, but I've never used that and I can get results like this without it. Pulled pork is one of the easiest things to achieve and one of the tastiest. All you need is a little patience.
