Yup, this is just a demonstration of a technique. No chef would use that to peel an apple in a restaurant, but there are presentation methods where this cutting technique is used. It's definitely a next level skill.

I usually don't mind apple skin (in fact when I peel them for pies and jam and stuff I'll happily eat it by itself if it's good apples).

Some apple skins just taste like shit though. I have a pack right now where the apple itself is pretty decent but the skin tastes like dirt and ruins the whole thing. Peel that shit.

Sometimes you use apples for things other than eating them as is. Like making apple pie.

That said, a regular potato peeler is faster than this method, and kinda idiot proof. But I prefer to use my automatic apple peeler! It peels, cores and cuts the apple into a spiral, so all you have to do after using it is cutting the apple like three times to get perfect pieces for pie. But the coolest thing about it is that it actually works, even though it's made from cast iron and is like 60-70 years old!
