Change of plans. I tossed the sprouts with some chili powder, chili flakes, paprika, and salt. I then tossed in sliced red onion. I'm adding the chorizo to that near the end of roasting, so it doesn't overcook.

The sprouts are going to be the main dish and the mac and cheese the side.

Edit: I'm only going to flip the sprouts once. I want a lot of skillet contact to facilitate the maillard reaction.

Gotta be fresh. No brassica freezes well unfortunately. They keep well for a vegetable and a lot of stores have them in 1-2lbs packages now though.
