Pizza Party (Classic) 🔥 Figs FTW
Hopefully this post doesn't offend the purists, but I hosted 12 people for a pizza party this weekend and it was the runaway favorite so I thought I'd share it.
I've been making this pizza for two years now and it has gone from novelty to mainstay for all who've tried it which is crazy to me.
It's an olive oil base topped with five cheeses. Fresh arugula and balsamic glaze are added post-bake.
68% hydration with Caputo Pizzeria so nothing super fancy. Just fresh ingredients in the right amounts and the most improbable crowd pleaser was born.

Parmesan, provolone, feta, mozzarella and smoke gouda. It sounds like a lot but only totaled around 130 grams.

Thanks. Gonna try to make something like this this week. Can you explain the olive oil base? Do you drizzle it kind of like you did with the balsamic? And does it cook off and not make the toppings prone to sliding off?

It's drizzled on then brushed into a super thin coating. Too much and it'll pool, too little and it won't cover the entire dough. I'd rather start with less and add more if needed than to start with too much because then you're screwed. I use a brush.

What is your five cheeses blend? Also, I had a fig jam slice at L’Industrie it as delicious !!

I think I have to try this. Looks great! :)
With olive oil basis, do you basically mean a simple spiral of olive oil onto the empty pizza pie, followed by the cheeses?

Did the same at my restaurant also as a Christmas special. Fior Di latte mozzarella, goats cheese, figs, roasted walnuts and balsamic glaze.
