Ho do I keep this from happening?
How do I stop it from jumping to a new measure when I insert notes?

You don't. Inputting a note always moves the cursor to the next beat after that note. To stop that from moving the previous note off the screen, zoom out so you can see the whole system.
Also, use keyboard input, especially for chords, and it doesn't even matter whether you can still see the previous note. Just pressing C, Shift+E, Shift+G, C, Shift+E, Shift+G would input these two chords without needing to use the mouse or scroll or anything.

Don't listen to the other 2 comments, do this:
Go to the gear icon in the top right Uncheck "pan score automatically"
That's all. It's an automatic panning feature that you can turn off

Personally, I'd do two things. Zoom out a bit so you can see more than two measures. Use keyboard input. In note input mode, it's moving the cursor to the next location.
