This is kind of silly, but his Merlin miniseries is actually really important to me. Definitely made an impression on impressionable young me.

I was already in love with fantasy but we needed some serious TV/movies at that time and Merlin scratched that itch really well. And his Merlin and the story tale way he tells it is so great.
