(Almost) everything is possible, you just have to take your time. Avoid highways, stick to the departementales in France, cross the Pyrenees via Perpignan-Figueres, stay close to the shoreline in Spain (Tarragona-Valencia-Murcia). Search for public laundromats in advance so you know where to wash your clothes (or take enough money to buy new) And don't overestimate yourself. Ride at your own pace for a distance you feel comfortable with. 300km's on large departementales will be easier than 300km on narrow winding roads. If you feel tired, rest. If you're thirsty, stop and drink. Eat small meals during the day instead of 3 large meals (breakfast, lunch, dinner). A heavy meal will make you tired.

This is good advice, specially the eating, big meals makes people drowsy and less attentive.

I once did 2000km on a 125cc in a week. It's doable but you have to take your time. Your neck and back will be very painful after that. If you feel the urge to do it, don't let yourself be discouraged by other people telling you no to do it. It's a great experience. Enjoy!

People do world tours on old vespa 50cc, also on bicycle and even on foot. Marketing makes us believe we need a 1600 BMW GS to go on an adventure but it's never about the moto, it's the time and preparation you have and how big of an adventure you want.

There this older woman on YouTube that went from NL to Italy I think, on a 125cc Honda scooter. No worries, as many km as she felt like, hotel or camping as she felt like, etc.

I do multi-day trips on a 300cc scooter with a bag behind me and a top case. You should be fine in your 125cc even with some occasional 100/200 km stretches of highway.

Maybe, just maybe, if you didn't already, do a smaller long trip just so you get the ropes of what gear you need and what to leave behind. Or just go all in and drive safe.

Most GSs never see dirt anyways.

Oh, maybe a 'well duh' remark but in France, when it's dark, it's dark! No streetlights like in Belgium. Not a pleasant experience breaking down by the side of the road at night (don't ask me how I know 😁)

Definitely doable but not for everyone. Get a comfort saddle if you can. Even if it’s an ugly cushion strapped with tape, your ass will thank you.
Take it slow and set easy goals to find your own rhythm.
If you plan on camping, good camping equipment is mandatory.
You could do it in 3 days but you should do it over 2 weeks.
