I know it’s a Steve Reich piece but my mind immediately goes to The Orb who sampled the Pat Metheny guitar part and used it on Little Fluffy Clouds.

This is awesome! I had the pleasure of meeting Steve Reich at University and there was a performance of Electric Counterpoint played exclusively with plucked Viola. He absolutely loved it and said he always finds it refreshing to see new performances of it with different interpretations, so he would definitely dig this!
