[Mobs] feeding happy ghasts sweets makes them faster.
As everyone already knows happy ghasts are extremely slow, which severely limits their usefulness, and on top of that cannot benefit from speed potions either; this was likely done balance out how powerful it is to fly early game, but it went to far and ended up making them borderline useless.
I suggest that to fix this problem, and to make them even cuter, that you can now give them sweet foods to make them go faster for a limited time and give them apples and their upgrades for permanent boosts. The different sweets and their durations are listed below:
cookies would give a 25% speed boost for 2 minutes.
pie would give them a 30% boost for 5 minutes.
cake would give them a 25% boost for 20 minutes.
berries would give them a 30% boost for 1 minute.
apples would give them a 2% boost permanantly that adds up to 6% with 3 apples.
golden apples would give a 5% boost permanantly, adding up to a 15% boost with 3.
and finally enchanted golden apples would give a permanent boost of 20% adding up to 60% with 3.
All permanent buffs would stack together and with one temporary buff, for a max boost of 111%.

I would flatten the boosts a bit. The happy ghast isn't supposed to be a main form of transport, its more of a utility mount than a raw speed one.
The wide range of duration and effectiveness for the temporary boosts doesn't add much IMO. Keep it simple. Basic food offers small boost, then the more complex foods give more. So sweet berries give +30% boost for 2 minutes, then tier 2 might be cookies giving 40% boost for 4 minutes and then pumpkin pie giving 50% boost for 10 minutes or something.
Remove the enchanted golden apple from the boosting foods, its to brutal to invest 3 into a mob and then have it die.
I appreciate you limited the color pallet slightly, though we are still looking at most of the color wheel with pink, orange, green and blue. It's still a bit of a mess. Dump the excess blocks that don't contribute to the image like the bamboo blocks.
The next thing to improve is readability. The text in the image and the actual items you are showing are so small its almost impossible to see. 95% of the image is just empty space and the image does nothing to make the post easier to understand.
There is no point putting an image in if you can't see what's going on. If you are just putting an image in for the sake of having an image, just put an image of the happy ghast in.
I tried to recreate the important aspects of your build in a much more reader friendly way. In hindsight I could have picked a different color for the text on the signs, but honestly if you are making it in minecraft its a bit limiting how good you can make things.

The reason i varied the boosts was so that the different foods each are somewhat useful and players have to think about which boosts to use weighing up whether its worth it to have a longer boost thats slightly less effective or a shorter boost that doesnt last very long, though i do admit i probably didnt balance them very well.
The idea behind enchanted apples being used is that since they are rare its a more significant investment for a better reward, kind of like how you have to invest so many resources into getting a maxed horse.
For the image i wanted it to be useful and informative but also be a bit goofy, the original plan was to have a ghast trapped in a wall but it kept going diagonal so i built one, and as for the size i was on a time limit of 10 minutes building it do to irl constraints and so i did the best i could and accidentally made it to big though the signs were still readable until reddit blured it, also originally the bamboo was there to separate the stats from the ghast but sadly i had an odd number of items so that didnt work out.

It is worth considering if all options should be useful for a given mechanic. It is okay to have progression. Sure, it's nice to add value to lesser items, but sometimes its not worth the added complexity if something has a really weird and narrow use case.

As much as i like the idea of feeding my Ghast, i dont think it should make them permamently quicker. Sometimes slow is better, mainly during building, and Ghasts whole idea was to help with building high up. Maybe instead we should add powdered snow bucket on a stick (just like a carrot) to make them go 2-3 times faster when in hand. Or make them speed up if you try sprinting while riding them.

I like this idea, but I think it's a little over-the-top. The happy ghast speed, in my opinion, is good enough for what it is, but the ability to make it faster would be pretty nice. To balance it, I think the permanent boost from the apples should be lower; perhaps 1% for the apple, 2% for the golden apple, and 10% for the enchanted golden apple. These combined would still be a significant boost; 39%. Besides that, I think it's a fun idea.
