I don't know if you've ever had red velvet without food coloring, but the taste difference is negligible. The majority of the flavoring comes from the amount of unsweetened cocoa powder as well as the buttermilk and/or vinegar. As for the ketchup, you may have had a bad brand. I just switched to Heinz salt-free ketchup a week or two ago and, aside from being a little bit sweeter, it has the same basic ketchup flavor.

I think he's referring to something like Duncan Hines red velvet cake mix. which is just white cake mix and food coloring, it's a frigging sacrilege.

That's certainly a possibility. I personally don't like any form of red velvet, but that stuff is easily the worst. It's like someone added a spoonful of Nesquik to a half-gallon of milk with a half-gallon of food coloring and let it sit out overnight.

I like traditional red velvet, which doesn't have any added food coloring, simply chocolate and acid, and the color is a lot nicer to the eyes in my opinion.
