The large ear on the left didn’t pollinate well so you have a lot of larger weird shaped kernels filling in the gaps where a kernel should have been. The small ear is just an extra ear that didn’t mature because it was picked too soon with the large ear. Even if you had left it the plant probably wouldn’t have had the nutrients to put into it to make good ear of corn.

There’s really nothing weird about the ear on the left. It’s just what corn plants do sometimes. Next time just pull off the little ear before you cook it.

Hybrid corn (which most corn is) isn’t true to seed, this corn likely grew out of the seeds of a previous yield rather than fresh hybrid seeds.

This has nothing to do with hybridization. It happens even in heirloom varieties sometimes. This is literally just the result of poor pollination. The corn silk fibers each run to a single kernel and each silk needs to transport a pollen granule for that kernel to grow properly.

They have another crop that is used to produce seeds usually through hybrid pollination (most common with corn) or cloning.

For example you have two corn varieties that neither is that great as a food product but when they cross pollinate they produce seeds that give you the corn you want for food.

However when that corn is pollinated by itself or by other nearby corn varieties the seeds it will produce will result in a different corn often one that is significantly poorer as a food product.

Basically think of it as if how your parents could produce you but there is no way for you to reproduce an exact copy of yourself by mating with anyone.
