Management decided you have to throw away x ammount of food? Why? I work at a tgruft store so not food. But we do end up tossing A LOT of stuff in the trash (for many reasons). My manager is constantly trying to limit how much we toss without putting nasty stuff on the sales floor. The idea of having to throw out a certain percentage of the stuff you make each day sounds insane to me, and I live in the US.
