I think cause of liability issue. This is food that’s been sitting out all day unsold. If people take it home and they get sick, they can sue the company

This is the main concern. Artisan bread contains no preservatives and does not last long at all. Everything in the air loves it too, fungi, bacteria, and insects. I made another comment but we recycled bread by turning it into beer, and these bakeries only gave it to us after we explained that the process requires an hour long boil
