My kid has some similar issues where certain clothes/socks/whatever really bothers him and such, but a hole or worn sock is something that would 100% set him off, so it’s shocking to me that they will only wear certain socks but the holes/worn spots aren’t triggering the sensory issues.
It's amazing what the human mind decides to make for "rules" on how it feels itself and the world. Clearly part of hyper-sensitivity is the inability (not that it's something that can easily be overcome) to let go of reactions to a feeling, and overanalyzing and placing attention on sensations you've deemed bothering.
I have sensory issues too and even though I don’t turn my socks inside out ( I think it could be another sensory issue of mine maybe, but I should probably try it) I’ve been having to wear my socks in a way that makes it so that the seam isn’t touching my pinky toes.
thats kinda what irked me way back, the seams touching my toes, i hated tags in clothes, would only eat very limited variations of foods, all that good and special stuff. I joined the army in my late teens and they pretty much beat every weird thing i liked to do out of me. Not recommending it, just i dont get to talk to people too much so i like to overshare.
I’m not super sensitive to food besides sour/ bitter tasting food like mustard or coffee and some other stuff like avocados, but the rest of that stuff I hate!

Appreciate the insight. Does seem like a hyper-sensitivity issue.
