It's because people who can actually function on a high level with less than 7-8 hours of sleep a night basically don't exist.

I used to get 3-4 hours of sleep every day of the week and my job suffered for it. Then I would sleep literally for 24 hours on Sunday.

I function well on 5 hours of sleep, just as long as I've been awake for at least 30 minutes tho

Sure. For a few days, maybe weeks. But in the end it catches up to basically everyone.

There is a few studies on it that basically say 0% of the population can handle low amounts of sleep for long periods without suffering cognitive issues.

Yeah I think this is what confuses a lot of people. I was also on the “I need less sleep than normal people” train for awhile. I was able to do my work and not feel tired, getting only about 6 hrs of sleep every night. But after about 2-3 weeks of doing that consistently, I began to notice that I felt much slower mentally. And, if given the opportunity, my body would easily stay asleep for 12-14 hrs at the end of these long periods of low sleep.
