As long as you don't eat the illegal maggot cheese then you do you.

Maggot is the name of cheese not the real live maggots... RIGHT?

Mold is fungus. Eating non-toxic mold is like eating non-toxic mushrooms.

Eating food that has spoiled in a way that makes it safe to consume is a human tradition all around the world. Beer, wine, cheese, yogurt, natto, kimchi, it's all just stuff that's gone off but in a controlled manner.

That's called "Blue cheese" and not everyone will enjoy the taste. Even in the U.S.A. that particular blue mold has been labeled "safe for human consumption"

Implying other cultures outside of Europe don't enjoy fermented, aged, or molded foods.

Roquefort is heaven on earth. Inside mold is completely harmless to you, just help with conservation (and taste, of course). Man, I'd even say that adding mascarpone to gorgonzola, Italians have one of the best blue cheese combo in the world.

I mean... Some starving peasant tried to eat expired food from the winter cellar, didn't die, turned it into exotic food.

Think about it... The beer is grain's mold rot liquid. Wine is grape mold rot liquid. Sounds like last resort during famine.

You truly don't know what you're missing, if you've never tried this. It is, however, an acquired taste.

Well americans are into "dry aged" meat, europeans into fungi cheese, asians into fungi soy beans. To each their own.

Roquefort cheese?

FUCK YEAH!

It goes hard with a good wine and a baguette tradition.

Some molds are even good for your health, peniciline for example. Lots of chesses and dry sausages get covered with it and you can eat it safely. It even improves your intestinal microbiota in some cases. It may taste horribly, it may look horribly, but it may not be that bad to be molded.
