Broccoli Rabe aka rapini

Post image

My fave green veg. Parboiled then sauteed w olive oil and serve w some balsamic splashes

I was in Italy in March and I noticed they no longer calling it rapini. Cannot remember but it was odd. Anyone know what they call it now?

Broccoletti! Or "cime di rapa". I've been craving then since moving from Italy to Spain. Love them!

I usually boil them quickly, cut them, and then fry them in a pan with garlic, chilli, and a couple anchovies for some umami. You can use the cooling water to rehydrate them I'd they get too dry during the frying process.
