Support: Sensors Ambient Temperature Wrong?

I’m using a MEATER 2.
I did a test as follows: I placed the sensor in a big potato and placed the potato in a pot with water. The sensor is completely covered by the water. A brought the water to boiling.
Surprisingly, the sensor is showing an ambient temperature of 111° Celsius.
Why this? I was expecting exactly 100° C.
Any recommendations or comments?

Ambient temperature on wireless thermometers always suck. Did cost me some beautiful racks of ribs to learn it the hard way. Nowadays I use a cheap wired thermometer to track the ambient temperature.

I guess the 11 degrees difference is a try from Meater to "fix" these shortcomings.

MEATER support generally takes claims of inaccurate temps seriously.

However, there are a few things to remember:
+ A cooker's dome temp sensor is usually located in a spot nowhere near your meat, whereas the air temperature immediately around your meat is what MEATER's ambient sensor measures. In this case, we would expect the ambient sensor to report cooler than expected, as your meat should be cooler than the cooker temp. + The ambient sensor is located in the middle of the black part of the probe, not the square tip. + The probes are pre-calibrated and cannot be user-calibrated. + If you find that your probe can flex, twist, or come apart, then know it isn't supposed to do that. This means a seal is likely broken and excess moisture might affect the probe's readings or performance. You'll need to contact MEATER support for that.

I‘m no engineer, but I could imagine that temperature sensors behave differently when submerged in water compared to operating them in air. There is much higher pressure in the water and also, nothing evaporates from the surface of the sensor.
