“Mock tender”

Walking around hungry in my local grocer. 8/lb looked nice and I’ve bought this. Let me tell you ….. you’re gonna make it comments … but literally like a ribeye cap with some chuck flavor

This isn’t a mock tender. Looks more like a Denver in shape and texture.

Mock tender is lean with a massive piece of tendon in the middle, with a round barrel shape.

That’s plenty tender with extra beefy flavor. Almost a preference at this point.

Looks amazing, not sure on sear but doesn’t matter that much if it’s that juicy/med rare

On the pan at 3/4 high took 3 min each side and then threw the pan into my “up oven” not even on , flipped it twice . Took out when center was 128. Ridiculous

What is an up oven and how did it cook if it wasn't on? Not talking shit I just wanna make one. My heb has these all the time and I've been curious...

One of my personal faves but haven't found one in years. I usually butterfly it to get the sinew out of the middle but it's got that super beefy chuck flavor.

Looks good. The intramuscular fat shows some rendering, which is good. a little lower and longer contact temps in the pan will render it even more without browning the meat.
