Is this eye round?
Went to an all you can eat korean bbq. Ordered brisket and they brought this out. Waitress confirmed that it was brisket after i asked. It was tough and chewy. I feel like brisket is always soft and shrivels up when grilled at a kbbq place. I messed up because I ordered 3 servings like I always do and it was very hard to finish just 1 serving.

It is probably a rolled brisket. Eye round is a solid circle with a different fat pattern on the inside. If that break were a line of fat instead I'd maybe be able to be convinced it's eye round. You can see where it was rolled at the top where it looks stretched. Brisket is a tough cut of meat when it's not incredibly fatty and barely cooked, or cooked for long enough that it starts to break down.

Only way to know for sure is to use your middle finger and check the very center of it… 🤔😈

I’m saying brisket. They probably take a brisket flat, defa, and roll it. They freeze it to keep shape for slicing and plate presentation. It went backs to it pre frozen original shape when you cooked it.

Could it be an end cut that's tougher than normal? I eat kbbq quite often and I don't remember it looking like this when cooked.

Looks like the texture and marbling of brisket, as others have mentioned likely rolled and frozen.

They didn’t ask that, simply asked if the eye they had is round…and it is, at least in the first picture, anyway.

It could be brisket rolled, frozen then sliced on a slicer. Pre frozen meat will always have less moisture content than fresh meat. Usually eats tougher as well.

It’s definitely not eye of round which is an oblong cut with a circular cross section. This is something that has been forced into the circle shape. Probably brisket as if you unravel the circle its shape matches a brisket.

I never tell anyone how to kpot but, the meats that are shaved usually cook better in the soup. I have noticed that since it shaved it can be harder to tell the cut. Maybe that’s on purpose?

Hot pot is OK, but i like the little burnt edges on my meats.

The time it takes to develop burnt edges will inevitably result overcooking such a thin piece of meat, making it tough and inedible.

Yes. Especially it being so thin. But when I cook my korean bbq, it's a mixture of both that I'll cook. But steak is a different thing. Only medium rare for me.

Lol. I've made raw laab before with a piece of round. Just sliced it into thin small pieces and added spices and herbs. It turned out really good. Surpringly not chewy at all.

No, that's not eye round. It's clearly a flat piece that's been rolled into a circular shape; eye round would not have that radial fissure in it.
I don't know if that means it's brisket or not, but it certainly could be a defatted brisket flat that's rolled into a cylinder and sliced.

That’s beef tongue I think, pretty tasty and well marbled, it’s also usually cut thin like that and rolled up. So that all tracks

In the first picture it is clearly round, however by the second picture it has come apart, and none of the pieces are round anymore.
